Simi's Chardonnay is charactized in every vintage by this silky texture and well balanced concentration of fruit and oak that follow through for a long, smooth finish. This vintage has special citris and apple notes in the aroma, and a fruit delicacy enhanced by the subtle vanilla nuances of oak. At the winery, the fruit was quickly pressed off its skins, then 48% of the juice was barrel fermented in French oak and 52% stainless steel fermented. After a secondary malolactic fermentation, the wine was barrel aged for almost 7 months. Regular stirring on the lies helped to integrate fruit and oak for a creamy, silky texture.
